Purple Majesty

This potato was developed by Colorado growers using natural cross-breeding techniques that somehow resulted in a superspud containing freakishly high amounts of antioxidants. We like that!  (Read more)

Purple Majesty

Bintje

This was a favorite last year of our CSA members. Produced nicely and tasted wonderful!  It has a slightly gold-colored skin and light, cream-colored flesh with a waxy, mid-dry texture making it an excellent all-purpose potato.

Bintje

Red Gold

Beautiful, early variety with lightly netted orange-red skin and delicate yellow flesh that cooks up flaky and delicious. High yields of smooth, uniform, medium-sized potatoes under most conditions. Scab- and virus-resistant. A new try for Eden's this year. Join us!

Red Gold

Yellow Finn

Another favorite of our CSA family last year. Buttery, outstanding flavor and texture. Smooth, thin, yellow skin and yellow-fleshed potato produces high yields. Round, slightly flattened and sometimes pear-shaped. 3 inch diameter.

Potato Planting Instructions;

Cut whole potatoes into pieces for large or into quarters for small being careful to include an "eye" on each piece.

Dust cut pieces with dusting sulfur to help prevent rotting and let skin form a "crust" at least 24 hours before planting

Add soft rock phosphate  (10lbs/100' or 1lb/10') and organic matter throughout the  trench

Plant pieces 12-18 inches apart and about 8" deep initially

As sprouts appear and grow, begin to hill up with compost, light soil or even leaves or non-coastal hay to cover all but the tops of the sprouts, to increase yield (coastal hay may contain bermuda grass seeds!)  Some gardeners on a small scale use large wire cages to mound hills on top of the sprouts and keep more compact, but this is not necessary.

Most varieties take about 3 months to fully mature, but you can always dig up "new" potatoes earlier after flowering of plants and small potatoes form - Caution; The sprouts/stems and green portions of the newly dug potato can be toxic - do not eat them! Let green potatoes cure first.

Plant 1#/10' for aprox. 10# yield
